Ingredients

Main Ingredients

  • 3 medium onions, sliced

  • 1½ cups fresh curd (well whisked)

  • 2 tbsp fresh malai (milk cream)

  • 2 tbsp cooking oil

  • 1 tsp cumin seeds (jeera)

  • A pinch of hing (asafoetida)

  • 1 tsp kasuri methi

Spices

  • Salt to taste

  • ½ tsp turmeric powder

  • 1 tsp Kashmiri red chilli powder

  • 1 tsp coriander powder

  • Extra red chilli powder (optional)

  • ½ tsp garam masala

How to Make Malai Pyaaz

Step 1: Prepare the Curd Mixture

In a bowl, whisk the curd until it becomes smooth and lump-free. Add salt, turmeric powder, Kashmiri red chilli powder, and coriander powder. Whisk everything together until you have a smooth, creamy mixture.

Step 2: Prepare the Tempering

Heat oil in a kadhai over medium flame. Add cumin seeds and let them crackle. Once they release their aroma, add a pinch of hing and sauté for a few seconds.

Step 3: Cook the Curd

Lower the flame completely before pouring the prepared curd mixture into the kadhai.

This is the most important step of the recipe. Keep stirring continuously while the curd cooks to prevent it from splitting. Continue stirring until the mixture thickens and reaches the khadka stage.

Step 4: Add the Onions

Add the sliced onions to the gravy. If you prefer a spicier version, sprinkle in a little extra red chilli powder.

Mix well, cover the kadhai, and cook for about 5 minutes. The onions should soften while still retaining a slight bite.

Step 5: Finish the Curry

Add the fresh malai and mix gently until it blends into the gravy.

Now add crushed kasuri methi and garam masala. Give everything one final mix and serve immediately.

Kunj Kitchen Tip

The secret to a perfect Malai Pyaaz isn't cream—it's patience. Always cook the curd on low flame and keep stirring continuously until it reaches the khadka stage. This keeps the gravy silky smooth and prevents the curd from splitting. Since this recipe uses only a few ingredients, fresh, aromatic spices make all the difference, allowing every flavour to shine without overpowering the dish.

Frequently Asked Questions

Why did my curd split?

Curd usually splits when it's cooked on high heat or isn't stirred continuously. Always use low flame and keep stirring until the gravy reaches the khadka stage.

Can I use sour curd?

Fresh curd is recommended. Sour curd can make the dish overly tangy and change its flavour.

Can I make Malai Pyaaz spicier?

Absolutely. Simply add a little extra red chilli powder while cooking the onions to suit your taste.

Can I prepare it in advance?

Yes. Malai Pyaaz can be refrigerated for up to a day. Reheat it gently on low flame before serving.
